Ingredients

dairy sour cream
1/2 c
mayonnaise
1 Tbsp
lime juice
1/2 tsp
red curry paste,optional
1 tsp
fresh basil, chopped

cooked chicken, diced small
1/4 c
sweet onion, finely diced
1/2 c
green apple, diced small
1/4 c
sliced almonds
salt and pepper to taste

leaves of boston or butter lettuce
4 oz
wisconsin havarti, sliced or dill havarti (my favorite)

Directions Step-By-Step

In a medium bowl, whisk together sour cream, mayonnaise, lime juice, curry paste and basil until well blended. Add chicken, onion, apple and almonds; season with salt and pepper; mix well . Refrigerate until ready to use.
Split croissants. Place lettuce, chicken salad and Havarti cheese on the bottom half of croissant. Place second half on top. Enjoy!!
