Ingredients

6 chicken breast halves, skinless and boneless
6 deli ham sliced thin
1/2 box cream cheese, room temperature
4 Tbsp parmesan cheese
1/2 tsp rubbed sage
1 tsp parsley flakes
1/4 tsp black pepper
1/2 tsp poultry seasoning
1 1/2 c corn flakes
1 stick margarine
1 Tbsp minced onions
fresh spinach
grape tomatoes, sliced
Pinched by latinsky, and 83 more.

My family loves this recipe. It is super easy and super tasty. A new twist on stuffed chicken.

 

Directions

In a food processor blend cornflakes,2 T. parmesan, poultry seasoning,sage, parsley,and pepper. Pour mixture into a pie pan or shallow bowl. Set aside.

Add cream cheese, minced onions,garlic,2 T. parmesan blend till smooth.

Flatten Chicken to 1/2" thickness. Spread cream cheese mixture on each piece of chicken. Layer spinach, deli ham slice, and tomato slices on each breast. Fold over sides of chicken and tuck ends; secure with toothpicks.

Melt Margarine in a shallow dish. dip chicken in margarine and then coat with cornflake mixture.

Place in a 3 qt baking dish. Bake at 350^ for 45-55 minutes or until chicken juices run clear.

I tried to edit this, a step is missing. after rolling chicken dip in melted margarine and then the cornflake mixture..then bake.

I made the roll ups and they were really great. Even my husband loved them and asked me when I'll be making them again. One quick question with what do you serve them with? Rice or noodles? Or anything else? Thanks once again.

Well I just put these together, but I didnt quite follow the recipe...I mixed the spices and parm. cheese, plue 2 cloves garlic crushed and everything in with cream cheese....Ooops!.. too late gotta go with it now...so I decided to amp it up a little and crushed some special K crackers southwestern style with more minced onion for the coating...I had to substitute diced tomato for cherry tom. too...So I kinda made up a whole different take on your recipe. keeping fingers crossed for tonights dinner...still should be good! Don't know how they will turn out as I made ahead of time and will coat them later just before baking. Wish me luck!

I keep forgetting to let you know your Chicken Roll Ups were a great hit at 3 dinner parties (buffet)I had in February. It took me some time the first time to get the knack of making them but from there on it was so easy. I had some left overs so froze them and cooked a week later. They were just as great as the first time. Thanks for sharing.
