Chicken & Rice Casserole

This is my old stand-by recipe because I know everyone in my family loves it. You can make changes to it as you like.... my daughter adds cooked, cubed potatoes in place of the celery; sometimes I add frozen peas to mine in place of the celery. It's extremely versatile but is perfect for potlucks and family dinners. Not too heavy but still very filling.

Ingredients

2 c
long grain wild rice, cooked
3 c
chicken, cooked and chopped or shredded
2 Tbsp
lemon juice
1/3 c
almonds, sliced
1 1/2 c
celery, chopped
1/2 c
onion, chopped
1/2 c
mayonnaise
1/2 c
sour cream
1/2 c
chicken broth
1/3 c
butter or margarine, melted
1 pkg
ritz crackers, crushed

Step-By-Step

1Mix everything together except the butter/margarine and crackers. Transfer to a lightly greased 9x11 baking pan.
2Mix crackers and butter/margarine together in a bowl and sprinkle on top of casserole. Bake at 350 degrees for 30 minutes or until bubbly and browned on top.
