Ingredients
| 2 1/2 - 3 c | cooked chicken or turkey, cut into chunks |
| 2 md | carrots, sliced |
| 1 lg | potato, cubed |
| 1 c | corn, canned or frozen,( thawed) |
| 1/2 c | peas, i use frozen and thawed |
| 1/3 c | onion, chopped |
| 2/3 c | butter |
| 2/3 c | flour |
| 1 tsp | salt |
| 1/2 tsp | black pepper |
| 3 1/2 c | chicken broth |
| 1 1/3 c | milk |
| 2 | pie crusts, home made, or store bought |

Directions
Preheat oven to 425 degree F.Boil carrots and potatoes until almost soft, drain and set aside.
Melt the butter in a 2 quart saucepan over medium heat, stir in flour, onion, salt and pepper. Cook stirring constantly until mixture is thickened and bubbly. Remove from heat.
Stir in broth and milk, heat to boiling; stirring constantly for 1 - 2 minutes. Stir in the meat and vegetables. Remove from heat.Line an ungreased pie pan with bottom pie crust. Pour the chicken mixture into pasty lined pan. Place remaining pie crust on top and flute the edges.
Brush the crust with mixed egg or melted butter.
Cut slits in the top of the crust to vent.Bake for 30 - 35 minutes or until golden brown.

Cassie, you know the easiest way to make a recipe book for your kids is to put together a JAP cookbook. All you have to do is post your favorite recipes and then add them to your cookbook. There are three different ways to put it together and the instructions are super easy! You could do one in a day or two. Then you could either download or purchase them for your kids.

I know Ellen, just not enough time with all I have going on right now. Once we get settled, I will have time to make one...I truly do want them to both have one..the boy is taking a lot of interest in cooking too. I told him he would make some lady a good wife someday..ha ha!

Definitely. I think all boys should learn to cook. My son started taking an interest when he was in middle school and taking cooking. He came home from school one day and made crepes!
Now that he's a single father, he is a wonderful cook! And now his 12-year-old daughter is taking an interest too. She and I are going to make mini-pies Saturday with a little kit she gave me for Christmas.
I know you're super busy with the move, but once that's over you can think about doing a cookbook on JAP. I for one would love to see a cookbook of your recipes!
