Ingredients

2 1/2 - 3 c cooked chicken or turkey, cut into chunks
2 md carrots, sliced
1 lg potato, cubed
1 c corn, canned or frozen,( thawed)
1/2 c peas, i use frozen and thawed
1/3 c onion, chopped
2/3 c butter
2/3 c flour
1 tsp salt
1/2 tsp black pepper
3 1/2 c chicken broth
1 1/3 c milk
2 pie crusts, home made, or store bought

Cassie's Notes:

My all time favorite comfort food.

You can replace the chicken with turkey, whichever you prefer.

 

Directions

Preheat oven to 425 degree F.

Boil carrots and potatoes until almost soft, drain and set aside.

Melt the butter in a 2 quart saucepan over medium heat, stir in flour, onion, salt and pepper. Cook stirring constantly until mixture is thickened and bubbly. Remove from heat.

Stir in broth and milk, heat to boiling; stirring constantly for 1 - 2 minutes. Stir in the meat and vegetables. Remove from heat.

Line an ungreased pie pan with bottom pie crust. Pour the chicken mixture into pasty lined pan. Place remaining pie crust on top and flute the edges.

Brush the crust with mixed egg or melted butter.

Cut slits in the top of the crust to vent.

Bake for 30 - 35 minutes or until golden brown.

Mmm, one of my favorite comfort foods. I usually make two, one for me (I eat it for several days or freeze part of it) and one for my son and granddaughter. They love it too.

Such a wonderful comfort dish..we love pot pies..hope you try it Paula..I use my Aunts pie crust recipe which is posted...so tender and flaky!

Cool!! I Make My Pot Pie with My Peach Cobbler Pie Crust Lol Its Great and I use Leak Soup as My Filling I Got To Sit Myself Down and Jot The Recipe down.. I Free Hand It..

That's the hardest part of these recipes...writing them out..am so used to just throwing them together...lol..I catch myself not measuring..and have to go back and measure so I know how much to put down on the recipes...

That's something I need to do also...for my kiddo's..they keep telling me to make some recipe books..I just don't take the time to do it..I will though, once I get caught up with everything else..

Cassie, you know the easiest way to make a recipe book for your kids is to put together a JAP cookbook. All you have to do is post your favorite recipes and then add them to your cookbook. There are three different ways to put it together and the instructions are super easy! You could do one in a day or two. Then you could either download or purchase them for your kids.

I know Ellen, just not enough time with all I have going on right now. Once we get settled, I will have time to make one...I truly do want them to both have one..the boy is taking a lot of interest in cooking too. I told him he would make some lady a good wife someday..ha ha!

Definitely. I think all boys should learn to cook. My son started taking an interest when he was in middle school and taking cooking. He came home from school one day and made crepes!
Now that he's a single father, he is a wonderful cook! And now his 12-year-old daughter is taking an interest too. She and I are going to make mini-pies Saturday with a little kit she gave me for Christmas.
I know you're super busy with the move, but once that's over you can think about doing a cookbook on JAP. I for one would love to see a cookbook of your recipes!
