Ingredients For chicken pomodoro

  • 1 can
    (14.5 ounce) italian style diced tomatoes
  • 1 can
    (15 ounce) tomato sauce
  • 1 can
    (6 ounce) tomato paste
  • 1 Tbsp
    balsamic vinegar
  • 1 Tbsp
    granulated sugar
  • 1/2 tsp
    dry oregano
  • 1/2 tsp
    dry basil
  • 1/4 tsp
    ground black pepper
  • 2 Tbsp
    olive oil, divided
  • 8
    chicken tenderloins, cut into thirds
  • 1 Tbsp
    minced garlic
  • pasta (any variety), prepared according to package directions
  • grated parmesan cheese

How To Make chicken pomodoro

    In a large bowl, combine diced tomatoes, tomato sauce, tomato paste, vinegar, sugar, oregano, basil, black pepper and 1 Tbsp olive oil; stir to blend.

    In a large, heavy bottom skillet, heat 1 Tbsp olive oil over medium-high heat. Saute chicken tenderloins for 5 minutes or until golden brown. Add minced garlic and saute for 1 minute.

    Slowly pour the sauce into hot skillet and reduce heat to low. Simmer the chicken in the sauce for 10 minutes.

    Serve over your favorite pasta and sprinkle with grated Parmesan cheese.
