Ingredients For chicken piccata w/ mushrooms on angel hair

1 1/4 lbchicken breast halves, skinless & boneless

1/3 citalian bread crumbs
-
1 x lgegg
-
1 Tbspolive oil, extra virgin
-
2 Tbspgarlic, minced
-
1 Tbspbutter
-
1lemon
-
1 lbcrimini &/or button mushrooms (i use both)
-
2 Tbspcapers (i don't like them, so i don't use them)
-
1 cchicken or vegetable broth, low salt
-
2 tspall purpose flour
-
1 boxangel hair pasta
- GARNISH:
-
parsley flakes
How To Make chicken piccata w/ mushrooms on angel hair

1Bring a large pot of water to a boil & cook pasta according to directions on package.

2Preheat oven to 350 degrees F.

3Spread breadcrumbs out on a large plate. Beat egg in a small bowl. Flatten chicken breasts, pounding carefully, to 1/2" thickness using a ziplock bag & a meat mallet or pan.

4Place the chicken in egg, then breadcrumbs to lightly coat.

5Heat oil & butter in a large skillet over medium heat. Cook chicken until light brown & cooked through, about 4 minutes each side. Remove chicken from skillet & set in a baking dish & place in oven for 5 minutes while sauce is cooking.

6In the same skillet where the chicken was cooked, add garlic & stir; cook 1 minute. Add mushrooms & stir; cook 2 - 3 minutes or until mushrooms are browned on both sides.

7Add flour & stir; mix well. Add chicken broth & stir. Squeeze lemon all over mushrooms; cook until mushrooms are soft & tender, about 2 minutes. Stir in capers, is using.

8Drain pasta & arrange on plates. Place chicken on top of pasta & spoon sauce & mushrooms over the top of chicken. Garnish with parsley.
