Ingredients

1 lb chicken scaloppini ( about 4. )
kosher salt , black pepper
3 Tbsp all purpose flour
1 lemon zest, grated and juice
2 Tbsp fresh or dried parsley
1 Tbsp capers, drained
1/2 stk butter
GARLIC MASH POTATOES, FOR SERVING
OR PASTA
1/2 c white wine and chicken broth. you can always add more.

My Italian girlfriend taught me how to make this dish. Its a zesty beautiful dish, It will have your pallet wanting more.

 

Directions

Season chicken with salt and pepper and sprinkle with flour.

Heat 2 tablespoons oil in a nonstick, large skillet.Cook over medium- high heat. Wait for oil to heat first.Cook the chicken 2 minutes per side. Put cook chicken on plate and set aside. ( reserve the skillet.)

Add butter, chicken broth, white wine, parsley, capers.

Put chicken back in the pan with step 3 ingredients. Cook until nice and bubbly.
Dinner is served!

I use to work at a Italian resturant ,and this is the way Mr Anthony made his ,I can promise you I will be making this....If you have never tryed this did it is a must ..I will take a photo when I make it ,all I need is the capers...

I will besure and post a photo,I am thinking of making this for dinner on the 14th of Feb.,I will use a non -acholic white wine ,a friend that will be here will not eat or dring any thing with acholic in it .You can not convince her the achoilic will evaporate..
