grated parmesan cheese
whole chicken breasts, boned, skinned, split
sliced green onions
frozen spinach, thawed and squeezed dry
pimiento, finely chopped
1In a small mixing bowl combine cheese and italian seasoning.
2Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside.
3Arrange pieces in an 8x8x2-inch baking dish.
4In a small saucepan cook onion in hot butter until tender.
5Stir in flour; add milk all at once.
6Cook and stir until bubbly; stir in drained spinach and pimiento.
7Spoon spinach mixture over chicken; sprinkle with remaining cheese mixture.
8Bake, uncovered, in a 350 oven for 30 to 35 minutes or until tender.
