Developed this while looking for a mac recipe. Needed to use some left over chicken, so incorporated it in. Hubby loved it!

Ingredients For chicken mac & cheese

  • 8 oz
    whole wheat macaroni
  • 1½ c
    milk
  • 1 lb
    velveeta cheddar cheese
  • 2
    eggs, beaten
  • ¾ c
    low-fat sour cream
  • ¾ c
    cheddar jack cheese, shredded
  • ¾ c
    mozzarella cheese, low-fat
  • 2+ c
    roast chicken, cubed
  • 2+ c
    frozen broccoli, chopped
  • mrs. dash - chicken mix, to taste

How To Make chicken mac & cheese

    Preheat oven to 350°. Cook macaroni according to directions. Drain & rinse with cold water. In a large sauce pan, pour in milk. Cut Velveeta into cubes, & add to milk. Cook, stirring until melted, on medium heat.

    Add a little cheese sauce to beaten eggs, beating while adding, to temper eggs. Then add to the rest of the sauce. Add the sour cream, cheddar jack, and mozzarella. stir until blended.

    Add cubed chicken, broccoli and Mrs. Dash. Add macaroni, mix well. Pour into casserole that's been well sprayed with non-stick pan spray. Baked until slightly browned and bubbly, about 45 mins. Enjoy!
