Ingredients For chicken kiev

1 stickbutter, room temperature

2 Tbsplemon juice
-
1 clovegarlic
-
1 Tbspparsley
-
salt & pepper, to taste

4chicken breast halves, skinless & boneless
-
oil
-
3 Tbspall purpose flour
-
1 x lgegg
-
3 Tbspwhite bread crumbs, fresh

lemon wedges
How To Make chicken kiev

1Work together the butter & lemon juice until smooth. Peel & mince garlic & add to the butter along with parsley & seasoning. Mix well. Shape into cylinder, wrap in foil & place in freezer for 1 hour or until firm.

2Place the chicken breasts between 2 sheets of dampened greaseproof paper on a flat surface & beat flat with a heavy knife or wooden mallet until thin.

3Heat oil in a deep fryer to 350 degrees F.

4Once butter is firm, slice widthwise into 4 pieces.

5Place a piece of butter on each chicken breast. Roll chicken around butter & secure with toothpick. Coat each piece of chicken all over with the flour, then dip in the beaten egg to cover & finally in the breadcrumbs, pressing them on well. Freeze 30 minutes.

6Still frozen, fry 15 - 18 minutes until golden brown. Drain on paper towels, remove toothpicks & serve immediately with lemon wedges.
