Ingredients For chicken kiev

  • 1 stick
    butter, room temperature
  • 2 Tbsp
    lemon juice
  • 1 clove
    garlic
  • 1 Tbsp
    parsley
  • salt & pepper, to taste
  • 4
    chicken breast halves, skinless & boneless
  • oil
  • 3 Tbsp
    all purpose flour
  • 1 x lg
    egg
  • 3 Tbsp
    white bread crumbs, fresh
  • lemon wedges

How To Make chicken kiev

    Work together the butter & lemon juice until smooth. Peel & mince garlic & add to the butter along with parsley & seasoning. Mix well. Shape into cylinder, wrap in foil & place in freezer for 1 hour or until firm.

    Place the chicken breasts between 2 sheets of dampened greaseproof paper on a flat surface & beat flat with a heavy knife or wooden mallet until thin.

    Heat oil in a deep fryer to 350 degrees F.

    Once butter is firm, slice widthwise into 4 pieces.

    Place a piece of butter on each chicken breast. Roll chicken around butter & secure with toothpick. Coat each piece of chicken all over with the flour, then dip in the beaten egg to cover & finally in the breadcrumbs, pressing them on well. Freeze 30 minutes.

    Still frozen, fry 15 - 18 minutes until golden brown. Drain on paper towels, remove toothpicks & serve immediately with lemon wedges.
