Ingredients

2 tsp
canola oil
1 lb
chicken pieces with skin and bones removed
1/2
onion, chopped
1
garlic clove, minced
1 lb
tomatillos, fresh
3
green chiles, roasted and chopped
1/2 c
apple juice
1 Tbsp
cilantro, fresh and chopped

Step-By-Step

1Spray a non-stick skillet with vegetable cooking spray.
2Heat oil and saute chicken then add onion and garlic, stirring until limp.
3Add remaining ingredients.
4Reduce heat, cover, and simmer about 15 minutes.
5NOTE: May substitute 12 ounces of canned tomatillos if you don't have fresh.
