My Mom has made this my whole life and now I'm making it as well. This has got to be one of my all time favorite recipes. It's just so creamy and delicious.

Ingredients For chicken enchilada casserole

  • 1 lb
    boneless skinless chicken breast (cut into 1 in. pieces and cooked)
  • 6-8
    flour tortillas
  • 1-10.5 oz. can
    cream of chicken soup
  • 1-14.5 oz. can
    diced tomatoes with green chiles
  • 16 oz
    shredded cheddar cheese
  • 16 oz
    shredded monterey jack cheese with jalapeno peppers

How To Make chicken enchilada casserole

  • 1
    Mix together cream of chicken soup and the diced tomatoes with green chiles. Line bottom of 13x9 in. casserole dish with two of the tortillas. Make layers of soup & tomatoes sauce, chicken, cheese and tortillas. Bake at 350 degrees F. 20-30 minutes or until heated through.
