Ingredients

1 medium
chopped purple onion
3 clove
garlic crushed with 1/2 tsp salt
1/3 medium
green pepper diced
1 Tbsp
curry powder
1 Tbsp
pureed ginger
1/2 c
chicken broth
1 can(s)
cream of mushroom soup
1 Tbsp
cornstarch
2 medium
chicken breasts, boneless and skinless
2 Tbsp
raisins or chopped apple
2 Tbsp
chopped green onion for garnish
1/4 c
oil

Directions Step-By-Step

Heat oil in medium pot,add purple onion,garlic,ginger& curry powder,till onion is transparent remove all to a bowl put aside

Add more oil if needed,brown chicken well, add onion & spices back ,add soup,stock,raisins

After about 30 mins or so simmering add green pepper simmer till thicker adding cornstarch,if needed.
Garnish with green onion serve over steamed rice
