Chicken & Cornbread Dressing

Ingredients

1 c
sweet onion, chopped
1 c
celery, chopped
2 Tbsp
fresh sage, chopped
1 tsp
freshly ground pepper
2 Tbsp
canola oil
2 c
self-rising white cornmeal mix
2 c
buttermilk
1/2 c
all-purpose flour
2 large
eggs, lightly beaten
1/4 c
butter, melted
2 Tbsp
sugar
2 c
chopped cooked chicken

Step-By-Step

1Preheat oven to 425. Saute first 4 ingredients in hot oil in a 12-inc cast-iron skillet over medium heat 8 to 10 minutes or until tender. Remove from skillet; wipe skillet clean.
2Stir together cornmeal mix, buttermilk and next 4 ingredients just until moistened. Stir in onion mixture and chicken just until blended. Pour batter into hot 12 in skillet.
3Bake at 425 for 25 to 30 minutes or until golden brown.
