Ingredients

1 medium
onion, chopped
1 - 8 oz
pkg of cream cheese, softened
8
green onions, chopped
2 c
mexican cheese, shredded and divided (the mexican fiesta cheese works well too)
2 clove
garlic, minced
3/4 tsp
cumin, divided
1 tsp
cilantro, fresh and minced (i used a tablespoon)
3 c
chicken, cooked and shredded
1/4 c
butter
1/4 c
flour
1 1/2-2 c
chicken broth
1 c
monterey jack cheese, shredded
1 c
sour cream
1 - 4 oz
can green chiles, drained and chopped (wouldn't need to drain them)
1/4 tsp
thyme, dried
1/4 tsp
salt
1/4 tsp
pepper
12 - 6
flour tortillas, halved

Step-By-Step

1In a bowl combine cream cheese, onion, green onions, 1 1/2c mexican cheese, garlic, 1/4t cumin and cilantro. Stir in chicken, set aside.
2In a med-large saucepan, melt butter, stir in flour til smooth, gradually add in broth, whisking/stirring as you go. Bring to a boil, cook and stir 2 minutes or until thickened. Remove from heat, stir in Monterey Jack cheese, sour cream, chilies, thyme, salt, pepper and remaining cumin.
3Spread 1/2c or so of the cheese sauce into a greased 9x13. Top with 6 torilla halves, 1/3 of the chicken mixture and 1/4 of the cheese sauce. Repeat with torilla, chicken and cheese sauce layers twice. Top with remaining torillas, cheese sauce and remaining mexican cheese.
4Cover with foil and bake at 350 for 30 minutes, uncover and bake another 10 minutes or until heated completely through.
Let stand 5 minutes before cutting.
When I serve this I put 1/4c salsa down on the plate, sat the piece of lasagna on top of salsa and then, for garnish I sprinkled chopped green onions over top. MMMMMMMmmm
*I didn't do the fancy garnish in the photo...due to that being leftovers the next day, since I forgot to take a photo the day of...lol
