Ingredients

1 medium
onion, chopped
1 - 8 oz
pkg of cream cheese, softened
8
green onions, chopped
2 c
mexican cheese, shredded and divided (the mexican fiesta cheese works well too)
2 clove
garlic, minced
3/4 tsp
cumin, divided
1 tsp
cilantro, fresh and minced (i used a tablespoon)
3 c
chicken, cooked and shredded
1/4 c
butter
1/4 c
flour
1 1/2-2 c
chicken broth
1 c
monterey jack cheese, shredded
1 c
sour cream
1 - 4 oz
can green chiles, drained and chopped (wouldn't need to drain them)
1/4 tsp
thyme, dried
1/4 tsp
salt
1/4 tsp
pepper
12 - 6
flour tortillas, halved

Directions Step-By-Step

1
In a bowl combine cream cheese, onion, green onions, 1 1/2c mexican cheese, garlic, 1/4t cumin and cilantro. Stir in chicken, set aside.
2
In a med-large saucepan, melt butter, stir in flour til smooth, gradually add in broth, whisking/stirring as you go. Bring to a boil, cook and stir 2 minutes or until thickened. Remove from heat, stir in Monterey Jack cheese, sour cream, chilies, thyme, salt, pepper and remaining cumin.
3
Spread 1/2c or so of the cheese sauce into a greased 9x13. Top with 6 torilla halves, 1/3 of the chicken mixture and 1/4 of the cheese sauce. Repeat with torilla, chicken and cheese sauce layers twice. Top with remaining torillas, cheese sauce and remaining mexican cheese.
4
Cover with foil and bake at 350 for 30 minutes, uncover and bake another 10 minutes or until heated completely through.
Let stand 5 minutes before cutting.
When I serve this I put 1/4c salsa down on the plate, sat the piece of lasagna on top of salsa and then, for garnish I sprinkled chopped green onions over top. MMMMMMMmmm
*I didn't do the fancy garnish in the photo...due to that being leftovers the next day, since I forgot to take a photo the day of...lol
