My Mother made this recipe and it was so delicious. I also have made this recipe for my family and they also love it. So I thought I'd share it with you all.I hope you and your family enjoy it as much as we all have through the years!

pinch tips: How to Quarter a Chicken

one package of chicken breasts 4-6
1 bottle of catalina salad dressing
apricot preserves
lipton onion soup mix

Directions Step-By-Step

You will need 1 long 8x10 pan. Wash Chicken, place Chicken Breasts in pan .
add 1 pkg of Lipton Soup Mix, 1/2 Bottle of Catalina dressing and 1/2 of an 18oz jar of Apricot preserves into a large bowl I use a large measuring cup to mix the 3 ingredients in. Mix well with spoon. Pour mixture over chicken. cover pan with Tin foil.* You can add more Catalina dressing or Apricot preserves if you want to when making this sauce.
Pre heat oven to 350 degrees. Cook Chicken 1hour on 350 degrees, Remove tinfoil and Brown chicken on top just a little.
I make Virgo yellow rice 16.oz bag and peas to go with the chicken. I fry 1 slice of bacon and add the peas, I serve rolls with this chicken dish also. When you are ready to serve pour or spoon the sauce the chicken was cooked in over the rice and chicken. This dish is so Easy to Make and quick to put together, and so delicious!
