Ingredients For chicken cassoulet, crock pot style

  • 1 c
    dry navy beans
  • 3/4 lb
    polish sausage links
  • 1 c
    tomato juice
  • 1 Tbsp
    worcestershire sauce
  • 2 tsp
    instant beef bouillon granules
  • 1/2 tsp
    dried basil, crushed
  • 1/2 tsp
    dried oregano, crushed
  • 1/2 tsp
    paprika
  • 1/2 c
    finely chopped carrot
  • 1/2 c
    chopped onion
  • 1/2 c
    chopped celery
  • 1
    2 1/2 to 3 lb ready to cook, broiler-fryer chicken, cut up

How To Make chicken cassoulet, crock pot style

    Rinse beans; place in saucepan with 1 quart of water. Bring to boiling. Cover; simmer 1 1/2 hours. Transfer to a bowl; cover and chill overnight. Drain beans.

    Halve sausage. Mix beans, sausage, tomato juice, Worcestershire sauce, bouillon granules, basil, oregano, paprika, and 1 teaspoon salt. Set aside.

    Place carrot, celery, and onion in crock pot. Sprinkle chicken with salt and pepper, place in crock pot. Pour bean mixture atop; press beans down into liquid.

    Cover; cook on low heat setting for 7 hours, or until done. Remove meat. Mash bean mixture slightly; serve in soup bowls with meat.
