Mix all ingredients except for mayo and bread crumbs in bowl. Make sure chicken is coated with seasonings.
Fold mayo and bread crumbs into mixture gently
Form into chicken cakes and refrigerate for at least 1 hour or until firm.
Line sheet pan with parchment paper, then spray the paper. Place chicken cakes on pan. Bake chicken cakes 12-15 minutes at 350F or until done (160F). Serve immediately or, if cooking in batches, keep in warm oven (150 to 200 degrees F) until ready to serve
