Ingredients

3 (14 oz.) can(s)
diced tomatoes, undrained
1 (6 oz.) can(s)
tomato paste
8 oz
fresh mushrooms, sliced
1
small onion, chopped
4 clove
garlic, minced
4 Tbsp
chopped, fresh parsley, divided
2 Tbsp
chopped, fresh basil
1/4 c
olive oil
1 Tbsp
cornstarch
2 Tbsp
cold water
3 lb
bone in, chicken, legs and thighs, skinned

Step-By-Step

1In large, deep skillet, heat olive oil. Add chicken and brown. Drain off oil.
2Add remaining ingredients, except for cornstarch and 2 Tbsp. cold water, reserving 2 Tbsp. fresh parsley. Reduce heat and simmer for 1 hour, or until chicken is very tender.
3Mix cornstarch and cold water until smooth. Add to sauce and stir until slightly thickened.
4Serve chicken and sauce over hot, cooked fettucine or thin egg noodles.
