This is one recipe that has many ways to make. They all good.

this is the way I make mine.

Ingredients

6 slice
bacon
4 tsp
olive oil
3-4 lb
fryer chicken (cut up)
2 medium
onion,chopped
1 medium
green bell pepper,chopped
4 clove
garlic
1 large
can diced tomatos
1 c
16 oz can tomato sauce
1 c
red wine
1 Tbsp
salt
1/2 tsp
each cuman,pepper,allspice,and thyme
2
bay leaves
10 oz
mushrooms, your choice
1/2 bottle
dark beer
2 can(s)
tomato paste, italian

Step-By-Step

1In a 14' deep dutch oven, cook bacon over med-high heat,till crisp. Remove with a slotted spoon ,crumble and set aside. Add 4 teaspoons olive oil to oven.Add chicken, brown on all sides. Remove from dutch oven keep warm.
2In drippings add onions,peppers, garlic and mushrooms.satue untill tender,(remember to scrap yum yums from bottom of pan,) Abought 5-10 min.
3return chicken to pot add all remaining ingredients. add tomato paste. Bring to a boil, Reduce heat to low and simmerfor 40-60 min. Discared bay leaves.

serve over rice or pasta.
