CHICKEN BREASTS with LEMON

This lemon chicken goes great with mashed potatoes and gravy and green beans. And with a piece of apple pie.

Ingredients

1/2 c
all purpose flour
salt and freshly ground pepper to taste
4
chicken breasts halved, skinless & boneless
2 Tbsp
olive oil, light
4
sprigs fresh thyme
2 Tbsp
shallots finely chopped
2 tsp
cloves finely chopped
2 tsp
lemon rind, grated
3 Tbsp
lemon juice, fresh
1/2 c
chicken broth
2 Tbsp
butter, unsalted

Step-By-Step

1Season flour with salt and pepper, and dredge the chicken all over.
2Shake off excess flour.
3Heat the oil in a heavy skillet large enough to hold the chicken piecesin one layer. Or use two skilltes.
4Add chicken and cook uncovered, over medium heat for 5 minutes or until light browned.
5Turn the chicken and cook for 5 minutes, or until cooked through.
6Carefully remove the oil from the skillet, leave the chicken. Discard oil
7Add the thyme, shallots, and garlic cook for about 1 minute. Don' burn garlic
8Add the lemon rind, the lemon juice and broth. Scrap the skillet to dissolve the brown particles that cling to bottom
9Add the butter, and cook for three more minutes.
