Ingredients For chicken & biscuit waffles w/ honey maple dressing
- CHICKEN:

2chicken breast halves, skinless & boneless

salt & pepper, to taste

vegetable oil
-
2/3 cbuttermilk
-
1/2 call purpose flour
- BISCUIT WAFFLES:

1 1/2 cself rising flour
-
1/2 tsppepper
-
1/4 cbutter, unsalted, cold & cut into pieces

1 cbuttermilk
- DRESSING:
-
1 Tbspolive oil, extra virgin
-
2 tsplemon juice
-
1 Tbsphoney
-
1/8 cmaple syrup
-
salt & pepper, to taste
-
4 carugula
How To Make chicken & biscuit waffles w/ honey maple dressing

1CHICKEN: Place each breat inbetween 2 sheets of plastic wrap; pound to 1/2" thickness & then cut in 1/2 crosswise. Season with salt & pepper.

2Preheat deep fryer to 350 degrees F filled with vegetable oil. Place buttermilk in wide soup bowl & fill another with all purpose flour.

3Dredge chicken in buttermilk, then in flour, shaking off excess. Add chicken to deep fryer, 2 pieces at a time, fry 4 - 5 minutes per side or until golden brown. Drain on paper towels. Repeat until all chicken is fried.

4BISCUIT WAFFLES: Whisk together self rising flour & pepper in a bowl. With pastry blender or 2 knives, cut butter into dry ingredients until it looks like coarse crumbs. Add buttermilk: whisk until no dry flour remains. Preheat waffle iron. In batches, scoop batter into waffle iron; cook until outside is golden brown & toasted. Repeat with all batter (you should have 4 waffles).

5DRESSING: In a bowl, add oil, lemon juice, honey, maple syrup, salt & pepper; whisk to combine.

6ASSEMBLY: Place arugula on 4 plates; top each with waffle; then chicken & drizzle all with dressing & enjoy!
