Ingredients For chicken & biscuit waffles w/ honey maple dressing

  • CHICKEN:
  • 2
    chicken breast halves, skinless & boneless
  • salt & pepper, to taste
  • vegetable oil
  • 2/3 c
    buttermilk
  • 1/2 c
    all purpose flour
  • BISCUIT WAFFLES:
  • 1 1/2 c
    self rising flour
  • 1/2 tsp
    pepper
  • 1/4 c
    butter, unsalted, cold & cut into pieces
  • 1 c
    buttermilk
  • DRESSING:
  • 1 Tbsp
    olive oil, extra virgin
  • 2 tsp
    lemon juice
  • 1 Tbsp
    honey
  • 1/8 c
    maple syrup
  • salt & pepper, to taste
  • 4 c
    arugula

How To Make chicken & biscuit waffles w/ honey maple dressing

    CHICKEN: Place each breat inbetween 2 sheets of plastic wrap; pound to 1/2" thickness & then cut in 1/2 crosswise. Season with salt & pepper.

    Preheat deep fryer to 350 degrees F filled with vegetable oil. Place buttermilk in wide soup bowl & fill another with all purpose flour.

    Dredge chicken in buttermilk, then in flour, shaking off excess. Add chicken to deep fryer, 2 pieces at a time, fry 4 - 5 minutes per side or until golden brown. Drain on paper towels. Repeat until all chicken is fried.

    BISCUIT WAFFLES: Whisk together self rising flour & pepper in a bowl. With pastry blender or 2 knives, cut butter into dry ingredients until it looks like coarse crumbs. Add buttermilk: whisk until no dry flour remains. Preheat waffle iron. In batches, scoop batter into waffle iron; cook until outside is golden brown & toasted. Repeat with all batter (you should have 4 waffles).

    DRESSING: In a bowl, add oil, lemon juice, honey, maple syrup, salt & pepper; whisk to combine.

    ASSEMBLY: Place arugula on 4 plates; top each with waffle; then chicken & drizzle all with dressing & enjoy!
