Ingredients
- CHICKEN:
- 2 chicken breast halves, skinless & boneless
- salt & pepper, to taste
- vegetable oil
- 2/3 cup buttermilk
- 1/2 cup all-purpose flour
- BISCUIT WAFFLES:
- 1 1/2 cups self-rising flour
- 1/2 teaspoon pepper
- 1/4 cup butter, unsalted, cold & cut into pieces
- 1 cup buttermilk
- DRESSING:
- 1 tablespoon olive oil, extra-virgin
- 2 teaspoons lemon juice
- 1 tablespoon honey
- 1/8 cup maple syrup
- salt & pepper, to taste
- 4 cups arugula
How To Make chicken & biscuit waffles w/ honey maple dressing

Step 1CHICKEN: Place each breat inbetween 2 sheets of plastic wrap; pound to 1/2" thickness & then cut in 1/2 crosswise. Season with salt & pepper.

Step 2Preheat deep fryer to 350 degrees F filled with vegetable oil. Place buttermilk in wide soup bowl & fill another with all purpose flour.

Step 3Dredge chicken in buttermilk, then in flour, shaking off excess. Add chicken to deep fryer, 2 pieces at a time, fry 4 - 5 minutes per side or until golden brown. Drain on paper towels. Repeat until all chicken is fried.

Step 4BISCUIT WAFFLES: Whisk together self rising flour & pepper in a bowl. With pastry blender or 2 knives, cut butter into dry ingredients until it looks like coarse crumbs. Add buttermilk: whisk until no dry flour remains. Preheat waffle iron. In batches, scoop batter into waffle iron; cook until outside is golden brown & toasted. Repeat with all batter (you should have 4 waffles).

Step 5DRESSING: In a bowl, add oil, lemon juice, honey, maple syrup, salt & pepper; whisk to combine.

Step 6ASSEMBLY: Place arugula on 4 plates; top each with waffle; then chicken & drizzle all with dressing & enjoy!
