1Cut up carrot's, celery, and onion's into large pieces.In large saucepot place fryer chicken and cut up veggie's. Add water until chicken is covered add everglade's seasoning. Boil uncovered on high heat for 1 hour or until chicken is done.
2Remove chicken from pot and let cool. While cooling remove veggie's and discard, reserve water to boil rice in. In same saucepot add yellow rice follow cooking direction's on the package, use the reserved water but add about 1 cup more. Let boil for 20 minutes. While rice is boiling cut up chicken and set aside.
3Once rice is done add cut up chicken and 1 can cream of mushroom soup. Stir until well blended. I sometimes also add a can of drained pea's. Serve and enjoy!
