Ingredients For chicken and sweet potatoes

2 csweet potatoes, boiled, peeled and mashed

3 cchicken breasts, cubed

10 ozcream of chicken soup

8 ozwater chestnuts, drained and sliced

1/4 cminced onion

1/4 cchicken broth
-
1/3 cskimmed evaporated milk

1/8 tspnutmeg
-
1/2 tspcinnamon
-
2 Tbspbrown sugar

3 Tbspwater
How To Make chicken and sweet potatoes

1Preheat oven to 350.

2In a medium size bowl, combine sweet potatoes, brown sugar, cinnamon, nutmeg and milk.

3Spread around the inside edge of a round 10 inch casserole, forming a ring.

4In a medium size non stick skillet, heat broth over low heat.

5Add onion and water chestnuts; cook until tender. Add soup, chicken and 3 tablespoons water; cook over medium heat until hot, stirring occasionally.

6Spoon chicken mixture into center of sweet potato ring in casserole.

7Bake uncovered, 30 minutes or until bubbling.
