I got this recipe from my husband's grandmother. She cooks this for us a lot when we visit her because she knows how much I love it. I cook this recipe from time to time at home and I love it so much I thought it should be shared.
Preheat oven to 400 degrees. Melt 1/2 to 3/4 stick butter in 13"x9" baking dish.
Remove dish with melted butter from oven. Add rice, onion soup mix, water/broth, and stir enough to even out ingredients. *More water or less rice may be used for rice to cook thorougly* Add chicken on top (sometimes I like to dice chicken). Cover with aluminum foil.
Bake for 1 hour. Time may vary depending on how large pieces of chicken are.
