Chicken and Brown Rice Casserole
boneless chicken breasts
Pour rice into 13 x 9 dish. Lay chicken breasts on top of rice. Pour dry onion soup mix over chicken. Add few pats of margarine. Pour hot water over all. Cover with aluminum foil.
Bake at 325 degrees for 1 1/2 hours or until most of liquid is absorbed.
Note: I use chicken tenderloin pieces instead of thick chicken breasts so it doesn't have to cook as long; usually about 45 min to 1 hour.
