Chicken and Brown Rice Casserole

Love this recipe because you can easily make it serve more if needed without a lot of trouble. Great for company or to share with someone just home from the hospital.

Ingredients

4
boneless chicken breasts
1 c
brown rice, raw
2 1/2 c
hot water
1 pkg
dry onion soup mix
few pats of margarine

Step-By-Step

1Pour rice into 13 x 9 dish. Lay chicken breasts on top of rice. Pour dry onion soup mix over chicken. Add few pats of margarine. Pour hot water over all. Cover with aluminum foil.

2Bake at 325 degrees for 1 1/2 hours or until most of liquid is absorbed.

3Note: I use chicken tenderloin pieces instead of thick chicken breasts so it doesn't have to cook as long; usually about 45 min to 1 hour.
