Chicken and Broccoli Stir Fry with Cashews

Ingredients

SESAME COOKING SAUCE:

1/2 cup water
1 tbsp. dry sherry
2 tbsp. soy sauce
1/4 tsp. sugar
1 tsp. sesame oil
1 tbsp. cornstarch

MARINADE:

2 tsp. soy sauce
2 tsp. cornstarch
2 tsp. dry sherry
2 tsp. water
dash white pepper

CHICKEN STIR FRY:

1 1/2 lbs. boneless skinless chicken breasts, cut into bite size pieces
3 1/2 tbsp. vegetable oil
1/2 cup cashews
1 small clove garlic, minced
3 cups broccoli florets
1 cup julienned carrots
1/2 large onion, cut into wedges

Directions Step-By-Step

For the cooing sauce, mix the water, sherry, soy sauce, sugar, oil and cornstarch in a small bowl.

For the Marinade, mix the soy sauce, cornstarch, sherry, water and white pepper in another small bowl.

For the stir fry, add the chicken to the marinade; toss to coat. Stir in 1 1/2 tsp. of the oil. Marinate for 15 minutes.
