Cherry Pecan Stuffed Chicken Breasts

My inspiration for this was a recipe for chicken breasts stuffed with sliced almonds and dried apricots. I made it my own way using the ingredients I already had- pecans and dried cherries.

Ingredients

boneless skinless chicken breast halves
1
egg, lightly beaten
1/2 c
plain breadcrumbs
1/3 c
pecan chips
salt and pepper

STUFFING

1/4 c
dried cherries
1/4 c
pecan chips
3 oz
chevre (goat cheese)

Directions Step-By-Step

Preheat oven to 375 degrees.
Using a small sharp knife, cut a slit in each chicken breast to create a pocket about 4 inches long.

In a small bowl, combine the stuffing ingredients. Stuff each breast with one quarter of the mixture. Season with salt and pepper.

On a plate, combine the breadcrumbs and pecan chips. Dip each piece of chicken into the egg, then dredge in the breadcrumb mixture.

Heat a little oil in a large nonstick oven-proof skillet over medium heat. Cook chicken on each side for 3-4 minutes.
Transfer to the oven and bake for 16 to 20 minutes, or until chicken is cooked through.
