Ingredients For cheesy chicken rotini

  • 1 1/2 lb
    chicken breast halves, skinless & boneless, cut into 1
  • 2 c
    water
  • 3 c
    rotini pasta
  • 1 - 16 oz. pkg
    mixed vegetables (your choice), frozen, thawed (i use california sytle - broccoli, cauilflower & carrots)
  • 1 - 10 oz. can
    ro*tel diced tomatoes & green chilies, undrained
  • 1/2 lb
    velveeta, cut into 1/2

How To Make cheesy chicken rotini

  • 1
    (SEE NOTE) Spray skillet with cooking spray. Add chicken, cook for 5 minutes or until no longer pink.

    Add water & bring to boil. Once boiling, add rotini; stir. Cover, let simmer on medium low heat for 10 minutes.

    Add vegetables, ro*tel & velveeta. Cover, cook for 5 - 7 minutes; stir occasionally.

    NOTE: Or you can use an rotisserie chicken, off the bone, cut into bite sized pieces added in step 3.
