Four ingredient great dinner! You could make this with chicken breast also! You could use fresh chicken not frozen if you like.

Ingredients For cheesy chicken enchiladas

  • 2 lb
    frozen chicken tenderloins
  • 1 pkg
    tortillas, flour
  • 1 bag
    mexican blend shredded cheese
  • 1 jar
    queso cheese sauce

How To Make cheesy chicken enchiladas

    In large frying pan coated with olive oil, cook chicken on HIGH until it is light brown. Turn and cook until the other side is light brown. It should take about 5 minutes on each side.

    While chicken is still in frying pan cut it up in 1/2 inch pieces. Make sure chicken is cooked thoroughly.

    Spray a 9" x 13" pan with non stick cooking spray. Lay out a tortilla, add 1/4 cup of chicken and 1/4 cup of shredded cheese. Roll tortilla up and place in pan.

    Continue until all tortillas are filled and rolled up in pan.

    Spread jar of queso cheese sauce on top. Cover with aluminum foil and back for 45 mins in a pre-heated 350* oven.
