Cheese Chicken Casserole

I 'adopted' this recipe yesterday. It was supposed to be chicken lasagne, but after making it, I think it would make a much better casserole with more noodles. The flavors are really good, so I didn't change much of the basic ingredients. I also think it would be good with a few jalapenos thrown in... lol

Ingredients

lg bag wide egg noodles (or your favorite pasta)
1/2
onion, chopped
1/2
green bell pepper, chopped
4 Tbsp
butter
1 can(s)
cream of chicken soup
1 can(s)
cream of mushrooom soup
1 large can(s)
mushrooms, sliced
1 large jar(s)
pimentos, drained and chopped
1/3 c
chicken broth
1 tsp
basil
1
whole chicken, boiled and deboned
1 c
cottage cheese
2 c
cheddar cheese, grated
1 c
parmesan cheese, grated

Directions Step-By-Step

Cook noodles in boiling, salted water until just tender; drain and rinse.

Saute onion and bell pepper in butter until onion is clear and tender.

Stir in soups, mushrooms, pimento, broth and basil. Add noodles and chicken, mix well.

Put half of mixture in large casserole dish. Top with cottage cheese, 1 cup cheddar and 1/2 cup parmesan cheese.

Add rest of chicken mixture. Cover and bake at 350* for 40 minutes. Uncover, top with remaining cheeses and bake for 5 minutes more.
