Bruschetta Chicken Skillet

1 can(s)
16 oz can of diced tomatoes and peppers
3/4 c
shredded mozzarella cheese
1 oz
chopped fresh basil (1/2 c)
boneless skinless chicken breasts (or thighs)
1 can(s)
8 oz tomato sauce
1 qt
fresh plum tomatoes sliced in 1/2
6 clove
garlic - diced very fine
1 can(s)
small - diced black olives
freshly grated parmigiana - to taste
panko breadcrumbs to dredge chicken


1pound your boned chicken to 1/2 inch thickness

2dredge in panko breadcrumbs after seasoning with salt and pepper to taste

3heat a large sized skillet and brown chicken on both sides along with the diced garlic

4stir together the canned tomatoes with the basil

5Layer your chicken into a 13 x 9 inch pan and pour the tomato sauce over top

6cover with grated mozzarella and top with black olives (or can omit olives if they're not your thing) - cover with fresh tomatoes - bake at 350 degrees until the cheese melts - serve with pasta of choice and a side salad.

7all you need now is a nice wine for your meal
