Ingredients For breaded chicken cutlets

  • 2
    boneless chicken breasts, pounded flat (about 9 oz) or cut in small 1"x1" pieces to make chicken nuggets
  • 2
    eggs
  • 3 oz
    unbleached white flour
  • 3 oz
    parmesan cheese (about 1/4 cup)
  • 1/4-1/2 tsp
    paprika
  • 1/4-1/2 tsp
    garlic powder
  • 1/4-1/2 tsp
    onion powder
  • salt to taste
  • dash pepper
  • olive oil for frying

How To Make breaded chicken cutlets

  • 1
    Put eggs in shallow bowl or pie plate; beat with fork until frothy. Put the flour, cheese and seasonings in another bowl or pie plate; mix well. Coat the chicken with the egg whites then coat well with the crumb mixture. Heat 1-2 tablespoons (enough to cover bottom of pan) over medium to medium high heat in large nonstick skillet. Fry the chicken on both sides until golden brown and the chicken is cooked through
