1 Tbspolive oil

4(3 oz ea) boneless chicken breast

1 mdonion, halved and sliced

1/4 cchopped fresh parsley

2 tspdried basil (or 1/4 cup fresh basil and no parsley)

2 clovegarlic, minced
-
1 can(15 oz) stewed tomatoes
-
1/4 ctomato paste
-
3 Tbspnonfat yogurt
-
1 Tbspbalsamic vinegar
-
1 Tbspparmesan cheese
-
5 ozyolk free noodles or fettuccini, cooked
How To Make basil chicken and tomatoes

1Drizzle oil over chicken in shallow casserole dish. Cover with onion, parsley, basil, and garlic. Microwave on high 6 - 8 minutes, stirring and rotating once. Let stand 5 minutes

2Remove chicken to a plate. Stir remaining ingredients except noodles into onion mixture. Microwave 3 minutes. Remove 1/2 cup sauce, reserve

3Add noodles to dish, stirring to coat. Top with chicken and reserved sauce.
