Ingredients For basil chicken and tomatoes

  • 1 Tbsp
    olive oil
  • 4
    (3 oz ea) boneless chicken breast
  • 1 md
    onion, halved and sliced
  • 1/4 c
    chopped fresh parsley
  • 2 tsp
    dried basil (or 1/4 cup fresh basil and no parsley)
  • 2 clove
    garlic, minced
  • 1 can
    (15 oz) stewed tomatoes
  • 1/4 c
    tomato paste
  • 3 Tbsp
    nonfat yogurt
  • 1 Tbsp
    balsamic vinegar
  • 1 Tbsp
    parmesan cheese
  • 5 oz
    yolk free noodles or fettuccini, cooked

How To Make basil chicken and tomatoes

    Drizzle oil over chicken in shallow casserole dish. Cover with onion, parsley, basil, and garlic. Microwave on high 6 - 8 minutes, stirring and rotating once. Let stand 5 minutes

    Remove chicken to a plate. Stir remaining ingredients except noodles into onion mixture. Microwave 3 minutes. Remove 1/2 cup sauce, reserve

    Add noodles to dish, stirring to coat. Top with chicken and reserved sauce.
