barbecued brined chicken

I was looking for a way to barbecue chicken without the skin burning (I love crispy skin!). I always brine my Thanksgiving turkey so I thought, why not brine chicken? This recipe produces the moistest chicken you'll ever taste off the BBQ along with incredibly flavorful, crispy skin.

Ingredients For barbecued brined chicken

  • 3 - 4
    bone in, skin on chicken pieces
  • 1/4 c
    kosher salt
  • 1
    bay leaf
  • 2 clove
    garlic, smashed
  • 3 - 4 slice
    fresh lemon
  • 1 Tbsp
    black peppercorns
  • 1 Tbsp
    coriander seeds
  • 3 c
    water

How To Make barbecued brined chicken

  • 1
    Mix together all brining ingredients (from kosher salt to water). Add chicken pieces. Brine for at least one hour, preferably overnight.

    Remove chicken from brine; discard brining water. Grill chicken pieces over low heat, turning occasionally, for about one hour or until juices are no longer pink.
