Ingredients

CHICKEN

1/4 c
vegetable or peanut oil
3 lb
boneless, skinless chicken breast meat, cubed
3/4 c
cornstarch
3
eggs, beaten

SAUCE

3/4 c
sugar
4 Tbsp
ketchup
1/4 c
teriyaaki sauce
3 Tbsp
rice wine vinegar
1/4 c
prepared orange juice
1/4 c
honey
1/2 tsp
garlic powder
2 Tbsp
cornstarch

Step-By-Step

1Preheat oven to 350 degrees. Spray a 9x13 inch baking dish with nonstick cooking spray.

2Heat wok or large nonstick skillet on medium high heat and add oil.

3Dip 8 chicken cubes in cornstarch, then in egg. Cook in oil in pan, stirring, 1-2 minutes on each side. Remove to prepared baking dish. The chicken will finish cooking in the oven.

4Repeat steps until all chicken is cooked.

5In a medium bowl, whisk sauce ingredients and pour over chicken; Stir.

6Bake, uncovered, 40 minutes, stirring every 10-15 minutes. Serve with rice.
