Baked Cornflake Chicken

Many moons ago this was in the monthly rotation of recipes at our house. I made it again recently and wondered why I took it out of the rotation.

It is liked a fried chicken, but is coated with Cornflake crumbs and baked. Easy too.

chicken breast halves
1 c
2 c
crushed corn flakes measured after crushing
6 Tbsp
buttter, melted


1Preheat oven oven to 350-degrees.

2Roll chicken pieces in mayonnaise to coat. Then dredge in corn flakes to coat.

3Place in baking dish. Drizzle with melted butter and bake bake for 1 hour.
