Ingredients For bacon meatball stroganoff

  • 1 pkg
    egg noodles, no-yolk variety
  • 2 - 4 oz jar
    mushrooms, sliced
  • 2 Tbsp
    vegetable oil
  • 1 lg
    onion, diced
  • 1/2 tsp
    paprika
  • 1/4 tsp
    cayenne pepper
  • 1 Tbsp
    butter, unsalted
  • 1/2 c
    white wine, dry
  • 2 Tbsp
    all purpose flour
  • 2 can
    chicken broth, low salt
  • 1/4 c
    lemon juice
  • 2 Tbsp
    mustard, grainy
  • 8 oz
    sour cream
  • 1 Tbsp
    dill, fresh
  • 1 recipe
    bacon meatballs (see below), thawed
  • salt & pepper, to taste

How To Make bacon meatball stroganoff

    Boil a large pot of salted water for the egg noodles.

    Saute mushrooms in 1 Tbsp oil in a nonstick skillet over medium high heat until browned, about 5 minutes. Transfer to a plate.

    Saute onion, paprika & cayenne in remaining oil in same skillet until onion is soft, about 5 minutes.

    Prepare noodles according to package directions; drain, toss with butter; set aside.

    Deglaze skillet with wine; simmer until liquid is nearly evaporated. Sprinkle flour over onions & stir.

    Whisk in broth. Add lemon juice & mustard; simmer until thick, 8 - 10 minutes.

    Stir in cooked mushrooms, sour cream, dill & cooked meatballs. Cook until meatballs are heated through. Season with salt & pepper. Serve on top of egg noodles.
