Bacon - Basted Game Hens

- cornish game hens
- 4 slice
- thick-cut maple bacon
- salt and pepper
1You will need a 14" deep cast iron dutch oven w/lid.And A meat trivet.
wash and pat dry game hens,salt & pepper to taste.
wrap one slice of bacon around each game hen. Peg with tooth pick.
2Set Trivet in dutch oven. Place game hens on trivet.
cover and set over med-high heat,roast for 15-20 min,untill hens begin to roast. move to low heat,add coals to lid.. Continue roasting for 15 min,until juices run clear and hens are done.
serve with roasted potatos.
