Awesome Baked Chicken Scampi

Andy Anderson !

I’ve been playing around with this for a bit of time, and finally came up with this recipe. I’ve seen chicken scampi recipes that use a cream-based sauce, and/or combine the chicken with veggies (like carrots, etc), and although I’m sure that it’s quite tasty… it’s not scampi.

Scampi is an oil, wine, lemon-based sauce. I like to think of mine as a combination of the best elements of scampi and piccata.

So, you ready… Let’s get into the kitchen.
