Asian style chicken noodle soup w/ ginger

This is a great soup for a cool night, but it's especially good if you have a cold. The ginger helps w/ healing.

Ingredients

1 lb
boneless, skinless chicken thighs, cut into 1"-pieces
1
8 oz bag shredded carrot
1 Tbsp
lite soy sauce
1/2 tsp
ground ginger
1 Tbsp
rice wine vinegar
1 c
water
1/4 tsp
pepper

14 oz cans reduced-sodium chicken broth
2 oz
dry vermicelli pasta
1
6 oz bag frozen pea pods, thawed, halved diagonally.
soy sauce to taste

Directions Step-By-Step

In a 6-quart slow-cooker, combine chicken, carrots, 1 tbsp soy sauce, vinegar, ginger and pepper. Stir in broth & water. Cover and cook on high for 3 hrs. Stir in vermicelli pasta and pea pods. Cover, cook another 12-15 min, or until pasta is cooked through. Serve w/ additional soy sauce.
