asian chicken salad with lime dressing
No Image
We love salads in the summer. I especially love salads when I don't have to cook. We usually have left over chicken when I roast one or buy one from the deli and this is one of my favorite ways to use it. This is my version of the Asian Chicken Salad from Houston's.

How To Make asian chicken salad with lime dressing
-
1Put all of the dressing ingredients in a jar with a tight lid and shake to mix well. If it's too tart add a little more honey. It keeps well in the fridge if you don't use it all. Can be made in advance.
-
2Mix the peanut butter with the hot water to melt the peanut butter. Add the rest of the peanut sauce ingredients. The sauce also keeps well in the fridge.
-
3Add the salad greens and carrot to a bowl and toss with the honey lime dressing.
-
4Place the chicken and orange slices on top and sprinkle with the tortilla strips. Drizzle with a little of the peanut sauce and serve with more peanut sauce on the side.
