We love salads in the summer. I especially love salads when I don't have to cook. We usually have left over chicken when I roast one or buy one from the deli and this is one of my favorite ways to use it. This is my version of the Asian Chicken Salad from Houston's.

Ingredients For asian chicken salad with lime dressing

  • LIME DRESSING:
  • 1/2 cup lime juice
  • 2 teaspoons mustard
  • 2 teaspoons mayo
  • 1/3 cup tablespoons honey
  • 1/4 cup oil
  • 1/2 teaspoon garlic salt
  • pepper
  • PEANUT BUTTER SAUCE:
  • 1/4 cup peanut butter
  • 1/4 cup soy sauce
  • 1/4 c hot water
  • 2 teaspoons toasted sesame oil
  • 1 teaspoon ground ginger
  • SALAD:
  • mixed greens
  • grated carrot
  • sliced roasted chicken breast (i use rotisserie from the market)
  • drained canned mandarin oranges
  • fried tortilla or wonton wrapper strips, can substitute chow mein noodles
  • chopped roasted peanuts or almonds, optional

How To Make asian chicken salad with lime dressing

  • 1
    Put all of the dressing ingredients in a jar with a tight lid and shake to mix well. If it's too tart add a little more honey. It keeps well in the fridge if you don't use it all. Can be made in advance.

    Mix the peanut butter with the hot water to melt the peanut butter. Add the rest of the peanut sauce ingredients. The sauce also keeps well in the fridge.

    Add the salad greens and carrot to a bowl and toss with the honey lime dressing.

    Place the chicken and orange slices on top and sprinkle with the tortilla strips. Drizzle with a little of the peanut sauce and serve with more peanut sauce on the side.
