Yummy. I like to use sweet soy sauce instead of sweet chili sauce sometimes.

Ingredients

1 lb
boneless skinless chicken thighs cut into pieces
3 Tbsp
fish sauce
4 clove
garlic
1
inch ginger peeled
3 small
shallots
1/2 c
cilantro chopped
2 tsp
cornstarch
1
head boston lettuce leaves separated
1 small
red onion diced
1 small
seedless cucumber peeled and sliced
asian sweet chili sauce

Step-By-Step

1Place the chicken, garlic, ginger, shallots and 1/4 cup of the cilantro in a food processor and process until mix well. Add the fish sauce and the cornstarch.

2Place parchment paper on baking sheet and preheat oven 400 degrees.

3Moisten hands and roll into meatballs and place on baking sheet. Bake about 15 to 20 minutes until browned and cooked through.

4Place 3 meatballs on lettuce leaf and garnish with red onion, cucumber, and cilantro and drizzle sweet chili sauce.
