Ingredients For artichoke chicken
-
3 1/2 - 4 lbchicken thighs, skinless & boneless
-
1 cartichoke hearts, thickly chopped
-
1 lgonion, thickly chopped
-
1 lbmushrooms, halved
-
3 Tbspbrown mustard
-
2 clovegarlic, minced
-
1/4 colive oil, extra virgin
-
1/4 cred wine vinegar
-
1 Tbsplemon juice
-
1/2 cred wine
-
1/4 tspbasil, dried
-
1/4 tspthyme, dried
-
1/4 tsptarragon, dried
-
1bay leaf
-
salt & pepper, to taste
How To Make artichoke chicken

1Preheat oven to 350 degrees F.

2Place chicken, skin side up, in a baking pan. Distribute onion, artichoke & mushrooms over the top. Combine olive oil, mustard, red wine, red wine vinegar, lemon juice, garlic, dried spices, salt & pepper & pour over the chicken.

3Bake for 1 1/2 hours, basting every 1/2 hour.
