Ingredients For artichoke chicken

  • 3 1/2 - 4 lb
    chicken thighs, skinless & boneless
  • 1 c
    artichoke hearts, thickly chopped
  • 1 lg
    onion, thickly chopped
  • 1 lb
    mushrooms, halved
  • 3 Tbsp
    brown mustard
  • 2 clove
    garlic, minced
  • 1/4 c
    olive oil, extra virgin
  • 1/4 c
    red wine vinegar
  • 1 Tbsp
    lemon juice
  • 1/2 c
    red wine
  • 1/4 tsp
    basil, dried
  • 1/4 tsp
    thyme, dried
  • 1/4 tsp
    tarragon, dried
  • 1
    bay leaf
  • salt & pepper, to taste

How To Make artichoke chicken

    Preheat oven to 350 degrees F.
  • 2
    Place chicken, skin side up, in a baking pan. Distribute onion, artichoke & mushrooms over the top. Combine olive oil, mustard, red wine, red wine vinegar, lemon juice, garlic, dried spices, salt & pepper & pour over the chicken.

    Bake for 1 1/2 hours, basting every 1/2 hour.
