Ingredients For apricot glazed sunday chicken

  • 1 lg
    roasting chicken
  • 3 md
    potatoes (any kind you have on hand)
  • 2 lg
    sweet potatoes
  • 3 sm
    apples(any kind)
  • 4 lg
    carrots
  • 1 lg
    white onion
  • 10
    garlic cloves
  • 3/4 c
    apricot jam or preserves
  • 1 c
    honey bbq sauce
  • 1 can
    dark soda(coke,pepsi,dr.pepper)
  • 1 tsp
    salt
  • 1 tsp
    pepper
  • 2 Tbsp
    soy sauce

How To Make apricot glazed sunday chicken

    Cut onion in half and slice fairly thick. Peel garlic cloves. Put the onion and garlic in the middle of a large roasting pan(no foil).

    Cut potatoes in half lenghtwise and place near edge of pan. Peel sweet potatoes and cut in half and place in pan. Make sure all potatoes are cut side down.

    Cut carrots into 2 inch chunks and place in pan wedged in next to potatoes. Core apples and cut into quarters. Place on top of veggies in pan.

    Spread the onion and garlic out a bit and try to get some in with the veggies. Wash and dry the chicken and place in middle of pan.

    Add a few dashes of soy sauce on the veggies. Pour half the can of soda over the chicken. Salt and pepper to taste.

    Place in 425 degree oven for 45 mins to and hour-be sure to check so veggies don't burn.

    Mix remaining soda, bbq sauce and jam in bowl. Pour over chicken and vegetables. Reduce heat to 350 degrees and bake 1 hour more.
