1Cook orzo as direcetd, drain. Drain apricots, reserving 1/2 cup syrup. Sprinkle chicken w/ a little salt and pepper and 1/2 tsp curry powder. Heat oil in lg skillet over medium heat. Cook about 8 min, or until no longer pink inside, turning once. Add apricots the last 2 min of cook time. Transfer to platter, cover and keep warm. Cut the green tops of 2 onions diagonally. Set aside. Chop remaining onion, add to skillet along w/ remaining curry powder. Cook, stirring 1 min. Stir in reserved syrup and orzo. Add to chicken and sprinkle w/ reserved green onion.
