Cooking chicken (especially) or turkey...sometimes it may look done on the outside, but on the inside it could be red or pink by the bone. There goes dinner. Well with this trick, taught to me by a good friend Eddie Werhner, here is a sure fire way for the chicken or turkey to be totally done, juicy & delish every time!

Ingredients For a nice trick to cook chicken/turkey - eddie's way

2-4 pieceschicken or turkey pieces, bone in, skin on

1 canchicken broth or stock
-
water (enough to cover chicken)

1 Tbspmccormick original chicken seasoning
-
1 Tbspmccormick perfect pinch orignal all purpose salt free seasoning
- TOP IT OFF WITH (OPTIONAL):

barbecue sauce
-
marinade of your choice

1Add broth & water about half way up in a large pot. Add chicken & salt free seasonings. Add chicken into water; boil 10 minutes, then turn down heat to a simmer; simmer chicken 30 minutes.

2Turn off burner & let chicken cool (in water) about 1 hour. NOTE: For those who can....can the juices & use for stock in soups & other things.

3After that point you can either marinade it in a ziplock bag in whatever marinade you'd like or slather on the BBQ sauce & let it sit for awhile. Or season it with your favorite spices. Then continue to cook as you desire (see note below). Whichever you choose - it'll be delicious & juicy!

4NOTE: This works for grilling, baking, broiling or frying the chicken or turkey. GRILLING: After marinated or seasoned to your choice…heat grill on HIGH. After heated, turn all burners to LOW (aka: indirect heat), cook breast side up 5 minutes (undisturbed), flip & cook another 5 minutes (undisturbed), flip again (if needed) for another 2 minutes, basting chicken with marinade each flip.
