This very old recipe is high in protein and iron. It is delicious ("Everything is better with cheese"). It is very good for lunch or a light supper. Definitely worth a try.

Ingredients For economy egg casserole

  • 1/4 c
    chopped onion
  • 2 Tbsp
    butter
  • 6 Tbsp
    all-purpose flour
  • 2/3 c
    skim milk powder
  • dash
    pepper
  • 1/2 tsp
    dry mustard
  • 2 c
    water
  • dash
    hot sauce
  • 1 c
    grated cheddar cheese
  • 8
    eggs, hard cooked, sliced
  • 1/2 c
    fine bread crumbs
  • 2 Tbsp
    melted butter

How To Make economy egg casserole

  • 1
    Saute onion in butter until transparent. Blend in flour, skim milk powder and seasonings.

    Gradually add water and hot sauce. Stir and cook until smooth and thick. Add cheese and stir until melted.

    Spread one-third of the sauce in a greased 9 X 5 inch loaf pan. Cover with half the egg slices. Repeat layers, ending with sauce.

    Mix crumbs and melted butter and sprinkle over the top. Bake at 350 F until bubbly, about 20 minutes.
