Ingredients For xtra cheeesy lasagna soup

  • 1 lb
    lean ground beef
  • 1 md
    onion, chopped
  • 2 clove
    garlic, minced
  • 4 c
    water
  • 2-15 oz
    diced tomatoes w/ garlic & evoo
  • 1-6 oz
    tomatoe paste
  • 2 c
    uncooked, mafalda pasta (mini-lasagna noodles)
  • 1 Tbsp
    italian seasoning
  • 1/4 tsp
    pepper
  • 11/2 c
    italian style croutons
  • 1-2 c
    mozzarella cheese, shredded

How To Make xtra cheeesy lasagna soup

  • 1
    Cook beef, onion, garlic in a dutch oven over medium heat until beef is browned and oinion is tender. Drain grease. Stir in water, diced tomatoes and tomato paste until blended. Stir in remaining ingredients except croutons and cheese.

    Heat to boiling then reduce heat,cover and simmer about 10 minutes until pasta is tender.

    Set oven to broil, pour hot soup into 6 oven proof soup bowls and top with 1/4c croutons and sprinkle with cheese. Broil soup with top 3-4 inches from heat for 1-2 minutes or until cheese is melted and slitly golden. ENJOY
